This elusive white truffle is one of the most sought-after morsels. Found in Alba, in the Piedmontese hills of northern Italy, the truffle appears in the degustation menu, as well as a-la-carte options, in addition to Jojo’s creative daily menu.
The four-course degustation menu is priced at Bt5,850 per person, while a-la-carte dishes start at Bt680 per dish, and additional white truffle can be requested for any dish at Bt380 per gram.
The special truffle menu includes risotto, pasta, wagyu strip loin and beef tenderloin, as well as a truffle-laden dessert. Guests can delight in the likes of beef tenderloin tartare with white truffle and a mayonnaise truffle sauce, or carnaroli rice with taleggio cheese espuma and white truffle. The golden onion and slow poached egg are served with 36-month-aged parmesan cheese fondue.
Merlo gives generous amounts of truffle to each dish: antipasti contain 3g of white truffle; the pasta, risotto and Wagyu beef tagliata have 5g each; while a delectable 2g of Alba truffle is added to the creamy white truffle ice cream.
